FASHIONQANDA.COM: Your first business venture was the Upper East Side bar and lounge BB&R
(Blonde, Brunette and a Redhead). What made you choose the concept of a steakhouse for your
newly co-owned establishment?
SUSY SALVO GLICK:
We love all cuisines. My husband and I both happen to be huge steak and fish
lovers.  Besides the carnivorous motivation, our chef, Lucas Billheimer, was raised in Colorado and is
very knowledgeable about the beef industry.  Along with his upbringing, He also worked in some great
restaurants such as Park Avenue Café and most recently Lure Fishbar.  He has extensive training and
passion for both the steakhouse concept but also helped us bring what makes us different and more
acceptable to most, which is a large fish and rawbar component.  Parlor Steakhouse is definitely
much more than a steakhouse, concentrating just as hard on fresh local fish and seasonal
ingredients.  The decision to open this concept on 3rd Avenue and 90th Street and was also
influenced by the lack of availability of anything near us.

FQA: What unique design attributes went into the décor of the restaurant?
SUSY:
The interior of Parlor Steakhouse is not your typical stuffy old man's steakhouse.  We wanted a
clean, bright airy look that also evoked warmth and comfort.  The lighting is at a cozy level and you can
snuggle up to someone special or just feel the energy of the crowd enjoying their meals.  The colors
are muted but classic and you definitely do not feel like you are sitting anywhere on the Upper East
Side for sure. We are trying to bring a bit of downtown appeal uptown where it is much needed.

FQA: With a job that requires you to dress to impress, who are a few of
your favorite designers?
SUSY:
This is a hard question, but I have a few actually. The first is Carolina
Herrera. I have always found her creations to be flawless, classically beautiful
and timeless. Herrera has always been a favorite of mine because she is
always incredibly well put together and emanates class and beauty.  I am
definitely a big fan. Reinaldo Herrera comes into the restaurant on a regular
basis and he blows me away by his style every time he enters. There is never
a hair out of place and he is always dressed impeccably! That is one stylish
family name! My next favorite designer is one I wear quite often!  I have an
obsession and I may need help.  Anne Fontaine is outrageous!  I find her
pieces to be one-of-a-kind,  feminine, with a little romantic edge to them.  I
tend to wear her pieces a lot when I am at the restaurant.  People definitely
notice! My final designer for this list is Tom Ford.  I do not feel that I need to
explain this one!

FQA: How would you describe your personal style?
SUSY: I would say eclectic.  One day I will be Mrs. Conservative sleek and the
next day I’m in something form fitting and sexy.  I like to change it up a bit
because I pretty much dress up for a living - every night- so if I stuck to one
genre, I would feel lost.  I love mixing pieces together that you wouldn't think
would work at first and then making it work and also making it fierce!  Along
with my need to glam up, I can not tell you how much I absolutely crave the
dress down days when I wear jeans, a sweater and boots or throw on a pair
of sneakers!

FQA: If we could look inside your closet what would we find?
SUSY:
Which closet?  I have three!  Well, My husband says I'm crazy because
of all of the clothing and shoes I own.  I don't think it is craziness, so much as
a bit of an addiction!  I love fashion and I love having choices when it comes to
what I want to wear!  I do not throw many things out, so you might find a pair of
80's leg-warmers and one of my Mom's jumpsuits from the 70's!
